Bean and Orzo Minestrone


Goodness, I love this soup! So much that I sometimes have it for breakfast with a slice of bread. I've posted the recipe before, but recently found a way to make it a lovely winter soup, which calls for posting another edition, don't you think?

INGREDIENTS
1 onion, wedged
1 or 2 carrots, sliced into coins
1 Tbsp butter or olive oil
3 cups water or broth
a handful of orzo*
1 cup diced canned tomatoes
1/2 cup kidney beans
2 Tbsp dried basil
salt and pepper to taste

DIRECTIONS
Sauté onions and carrots for a few minutes, just enough to soften. Add water/broth and orzo, bring to a gentle boil for 10-15 minutes. Add tomatoes and simmer another 5 minutes. Add basil, salt and pepper, and heat for another minute or two. Enjoy!

*Orzo is a tiny pasta that looks a little like grains of rice.

I keep wanting to try this recipe...but the weather here has been so springy, I can't convince myself to make a winter soup!!

Oh, how lovely it must be for the weather to be springy... yesterday was sunny and not freezing, but I have been deceived before!

So you need to try the SPRING version of the soup: Tomato and Green Bean Soup!

Sadly, green beans aren't available here. (We used to be able to get canned ones at Costco, but they don't have them anymore.)
