
Malcolm's birthday party finally happened! We took our party-in-a-van to the rink yesterday and spent a pleasant hour weebling and wobbling, but (mostly) not falling down. Everyone was surprisingly steady on their skates. (Although Mitch was a good enough sport to fall for "entertainment" purposes. If you want a big bang for your comedy buck, an audience of four and five year olds watching an adult hit the ice hard is pretty good.) As an added bonus, there were hockey games before and after the public skate. Hurrah!
The party was good, of course, but it's really all about the cake, isn't it? I'm certain that for Malcolm, it's all about the presents. Today at preschool he instructed a friend who didn't make it to the party to bring him a gift. Oh dear... tact comes with time, I hope?
Anyway, I do love me some chocolate cake! I know I just shared my love of soup the other day, but just in case you find yourself in need of cake in the near future...
Jan's Chocolate Cake
INGREDIENTS
1 cup butter
2 cups white sugar
2 eggs
1 cup buttermilk
1/2 cup unsweetened fair trade cocoa powder
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup water
DIRECTIONS
1) Preheat oven to 350*F (175*C). If using layers, grease and line the pans with parchment paper. If using a 9 X 13 pan, grease and dust with cocoa powder. Sift together the cocoa, flour, baking soda and salt. Set aside.
2) In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Alternately beat in the buttermilk and the flour mixture, mixing just until incorporated. Add the boiling water and beat for one full minute.
3) Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
