"Secret Ingredient" Chocolate Mousse

I have a post on our holidays in the works, but sometimes I don't contribute anything to the blog when I feel like there is something else I should write about first. So in honour of a friend who gave me a little nudge, here is what I'm thinking about right now: chocolate mousse. It's yummy and super fast and dairy-free/gluten-free, so it's a dessert Mitch can eat too!

"Secret Ingredient"* Chocolate Mousse

1 package silken tofu (at room temperature if you plan ahead)
3/4 cup fair-trade semi-sweet chocolate chips or solid chocolate, chopped
3 Tablespoons honey or maple syrup
1 tsp vanilla extract

Blend silken tofu in a blender until smooth. Melt chocolate chips in microwave or a double-boiler (but DON'T let water or tofu or anything else touch the chocolate or else it will instantly turn into a gritty, solid lump and you just might need to run out to the store to get another package of chocolate and start all over).

Add melted chocolate, honey, and vanilla to tofu and blend until it's smooth and creamy and delicious. Eat it straight out of the blender if you want. (Just kidding ... sort of.)

A nice way to serve this: over a layer of bananas or strawberries or other suitable fruit. Enjoy!

*The kids think it's hilarious that there's tofu hiding in a dessert, so they like to announce that there's a secret ingredient. IT'S TOFU! I've tried explaining that it's no longer a secret if you make an announcement, but this subtlety has eluded them so far.

Yay, here it is! It's so yummy and seems so simple. Can't wait to try.

PS - I don't plan on telling Greg about the tofu, so maybe it can be a secret from him? :)

It IS so simple!

And my lips are sealed re: tofu on the Greg front. You'll have to let me know if he even notices anything different.
