Summertime and the livin' is easy...

Oi! There is so much to catch up on from the summer, so I will just give you a quick summary, okey-doke? Hopefully pictures make up for few words.

I worked for our church this summer and took two courses, one of which I still need to write a paper for. I also took up running this summer and really hope I can continue to make time for it throughout the academic year.

The kids did a lot of hanging out, reading, imagining games, and whatnot. We made skipping ropes out of rubber bands...

and created instruments out of stuff around the house.

The kids got into a game called Bakugan. (They're pretty serious about it, obviously.)

They mastered frisbee, freeform gymnastics moves, and consecutive somersaults. Maren's record is 20 and Malcolm managed 23 in a row! (Without throwing up, even!)

We went to plenty of free outdoor concerts and movies in the park and made it to the beach a few times... which resulted in LOTS of mosquito bites.

The kids created elaborate castles and racetracks, and personal CD mixes.

Still, even with all these adventures, they were literally climbing the walls. (^_^)

Oh yes! We also discovered a great recipe for Triple Ginger Molasses Cookies!

Triple Ginger Molasses Cookies

1/2 c. unsalted butter (at room temperature)
1 1/2 c. sugar, plus 1/4 c. for dipping
1/4 c. fancy molasses
2 tsp. grated fresh ginger
1 large egg
2 c. + 2 Tbsp. flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. ground ginger
1/2 tsp. ground cinnamon
2 Tbsp. finely chopped candied ginger

1) Preheat oven to 350°F and line a baking tray with parchment paper.
2) In a medium bowl, cream together butter and 1 1/2 c. sugar until light and fluffy. Add molasses, fresh ginger, and stir in egg.
3) In a separate bowl, blend together flour, salt, baking soda and spices; add to butter base and blend until smooth. Stir in candied ginger.
4) Place 1/4 c. sugar in small bowl. Shape cookie dough into 1 1/2 inch balls and toss into sugar to coat. Place on prepared baking tray. Flatten cookies with your hand or the bottom of a glass.
5) Bake cookies for 12 to 15 minutes, until lightly browned around the edges. Remove cookies from pan to cool.

Enjoy!

Cookies can be stored for up to 5 days in an airtight container.
2 c. flour

Love the pictures! When I used to get back from Camp Wildwood, I'd have so many mosquito bites! I remember my legs looking like that!

Oh, I just adore this post. Take 2 months of Canadian summer, stir in 2 creative & energetic kids, shake well over fresh green grass and you wind up with some fantastic memories. sigh :-)

Our absolute favorite: the wall climbers...Nothing compares with joy on the face of a child:

I'm feeling a bit guilty here since you three seem more devoted to this blog than I have been this year!

Rachel -- seriously? I had never seen so many bites on one person, but Malcolm took it all in stride!

Janice -- I didn't even get to tell you about the most Canadian part of our summer yet: a week at Marie's place in Nova Scotia!

Barb -- indeed! They've been up and down the walls and doorways all summer, and pretty pleased about it. Don't worry, though -- they know the opportunity is only available at our home. (^_^)

I was just looking at the pictures again and I can't believe how much Maren and Malcolm look alike with those ball things!

That's true, Rachel! I find that people are starting to comment more often that Maren looks like me as her face stretches out, but when they are in the same pose you can definitely still see the strong resemblance between them.
