Smooth and Rich Hot Chocolate

I got a chill in my bones this afternoon, Mitch was home early, the grey sky was darkening... conditions were perfect for the indulgence of homemade hot chocolate. Mmmmmm. Thanks to Andrea at a peek inside the fishbowl for the recipe. (Which is, according to Maren, "the best hot chocolate I have ever had.")

1/3 cup unsweetened fair-trade cocoa powder
2/3 cup white sugar
pinch of sea salt
1/3 cup boiling water
3 ½ cups milk
3/4 tsp vanilla extract
1/2 cup half and half (totally optional)

Combine the cocoa, sugar and salt in a saucepan. Blend in the boiling water. It’ll make a thick paste. You will be very tempted to lick the spoon, but be careful, it’s hot, okay?

Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Make sure it doesn’t scorch. Stir in the milk and heat until very hot, but do not boil.

Remove from heat and add vanilla. Divide between four mugs and add the cream, or marshmallows if you’re so inclined. (Miniature candy canes are also a nice touch this time of year.)

That’s it! It takes about 10 minutes, but it’s so worth it.

Hey, I'm glad someone else is enjoying this recipe. I love the idea of adding candy canes. I'll have to try that sometime...

Mmmm...that's the same recipe that our family loves too! (Believe it or not, it's the pinch of salt that makes it extra yummy. Don't leave it out.)
