I have needed to go to the grocery store for a few days, but haven't wanted to take the kids out in the -36 windchill. So as I was trying to come up with something for Maren's lunch box the other night, I discovered this yummy little spread.
Creamy Pumpkin Spread
Mix together the following ingredients until smooth:
- about 3 Tbsp of light cream cheese
- about 3 Tbsp canned pumpkin
- a pinch of cinnamon
Sweeten to taste (brown sugar, honey, or maple syrup would work)
I can't tell you how it would turn out with regular cream cheese. Light cream cheese isn't as firm, so it mixed up very easily. This is a good way to use up leftover pumpkin from the Spicy Pumpkin Cereal Bars. Tastes like a little bit of Thanksgiving on your bread/bagel/french toast/muffin!
