Fruit With Extra Yum

Since trying out a lime-y, spicy watermelon salad recipe a few months back and enjoying it so much, I've been experimenting with some other unexpected combinations in fruit salad. Here's something we tried last night that was deeelish! I didn't take a picture, so I guess you'll just have to try it yourself to see what it looks like. ;)

All measurements are very approximate, and I think the ingredients could be flexible depending on what's in season and on sale where you are.


Combine in a medium salad bowl:
1/2 cantaloupe, seeded and diced into 1/2 inch cubes
1 cup fresh blueberries
2 peaches, diced into 1/2 cubes

Blend in a small bowl:
2 Tbsp lime juice

2 Tbsp honey

Prepare:
2 slices Australian crystalized ginger
, minced
2 Tbsp fresh mint, chiffonaded
zest of one 1 lime

Add ginger, mint, and lime to fruit; pour lime-honey mixture over fruit and toss gently.

Garnish with a sprig of fresh mint. Enjoy!

PS - I get Australian crystalized ginger at the Bulk Barn.

Thanks for telling me about the Bulk Barn. I was thinking that ingredient was a lost cause. And the link for doing that thing with the leaves...big help. I want to try this...hopefully it will be a big hit.
I always need tons of help! Oh, is this your meal, or a sidedish, or dessert?

I was given a huge amount of mint leaves from someone's garden that I can share with you if you're interested.

We had it as... a dessert, I think. Or maybe as a side? No, dessert. Yummmmmmm.

Guess what I found at BBarn tonight? Black sesame seeds! Thought you might find that interesting. :o)

Still have mint? Sorry I've taken so long on this. I am going to make this tomorrow...think I can do it without the mint? I'm not sure where to go for it. Plus, I'm not sure that Mac would eat it. But, I would...YUM!
