Chocolate Chunk Cookies
(makes... 24? 30? I prefer to make half a batch, which is usually about 14)
Cream together:
1 cup butter
1 cup white sugar
1 cup brown sugar
Mix in:
1 tsp vanilla
1 tsp salt
2 eggs
Then mix in:
2 1/2 cups unbleached flour
And finally, fold in:
2 cups dark fair-trade* chocolate, cut into chunks
Drop by spoonfuls onto a cookie sheet, leaving two inches between. Bake in preheated oven at 350*F for 8 to 10 minutes. Let stand for five minutes before removing to wire rack to cool.

Hooray fair trade!! Have you tried the fair trade chocolate chips yet Mel? They're so yummy! Also have you tried the Just Us fair trade sugar? It's available at Superstore in the Organic section. It's organic so no bleaching and a 1 kg bag is only 3.95. Or if you're like me and go through a whole bunch of the stuff we get 4kg bags at Villages for 13.00. Just thought I'd let you know.
